Light Brioche Hamburger Buns



 I have tried many hamburger bun recipes but all too often they are just a big disappointment. They are usually heavy and dense and just too filling. The buns that are available in the big grocery stores are equally disappointing, hard, crusty and full of preservatives.  I love a hamburger bun that has a nice light crust and is soft  on the inside, like you find in a 1950's style diner. In my opinion this bun meets all of the requirements. I lightly butter the buns and then toast them on the grill or in the oven before filling with all the fixings. Yummy!! This is a easy recipe even for the first time baker. I have also made hot dog buns using this recipe and they are excellent!! Making homemade buns takes your burger or hot dog from ordinary to extraordinary.





Yield: 10-12 buns

Ingredients:

1 Cup warm water
3 Tablespoons warm milk
2 Teaspoons active dry yeast
2 1/2 Tablespoons sugar
2 large eggs
3 1/3 Cups bread flour
1 1/2 Teaspoons salt
2 1/2 Tablespoons softened butter

Directions:


Combine water, milk,sugar and yeast. Let stand until foamy approximately 5 minutes.
Beat 1 egg in a small bowl.
In a large bowl combine flour and salt. Add butter and rub between your fingers until it is the size of small crumbs.
Add yeast mixture and egg to flour and stir until dough comes together.
Lightly sprinkle flour onto to counter top and dump dough out.
Knead until smooth and elastic approximately 7-10 minutes or use dough hook on stand mixer.
Return dough to a clean bowl and cover with plastic wrap. Dough will be a little sticky. Let rise in a warm place until doubled in size (1-2 hours).
Line a baking sheet with parchment paper.
Roll dough into a log shape and divide into 10-12 equal pieces depending on the size you prefer. I usually make 11 hamburger buns.
Shape each piece into a ball  and then with your fingers press into a flat disc and arrange on baking sheet.
Cover loosely with a kitchen towel.
Allow buns to rise in a warm place for approximately 1 hour
Set a shallow pan of water on the oven floor or lower rack.
Preheat oven to 400 degrees F.
Beat remaining egg with 1 teaspoon of water and gently brush each bun.
Bake buns for approximately 15-20 minutes until golden brown.
Cool on wire rack after baking.
Combine water,milk,sugar and yeast. Let stand for 5 minutes.
Combine flour and salt. Add soft butter.
Rub butter into flour using your fingers until the size of small crumbs.
Combine beaten egg and yeast mixture to the flour.
Form dough into a ball and place on lightly floured work surface.

Knead dough for 7-10 minutes by hand or use dough hook in a stand mixer.

Return dough to a clean bowl and wrap and cover with plastic wrap.

Let rise in a warm place until doubled in size 1-2 hours.





Equally divide dough into 10-12 pieces and flatten into discs to desired size. Place on a cooking sheet lined with parchment paper.

Buns are ready to bake.

Combine beaten egg and water.

Gently brush each bun with egg wash.

Don't forget to place a pan of water in bottom rack of oven when preheating oven!!

Slice, butter and toast and this bun is ready for the hamburger!!
