Sub Buns


 These buns are excellent to make sub sandwiches or beef dips. The exterior is nice and soft due to applying butter to the hot buns and laying a tea towel over the top right after they come out of the oven. This is a very important step as it steams the buns a little, so don't leave it out.  I like to make the buns and then set out all the sub  fixings and everyone can then customize their own sandwich.

Guinness Stew and Potato Cake

 

I saw this recipe being made on tv when I was watching a show called "You Gotta Eat Here Canada" and as luck would have it I also had the recipe book highlighting all the recipes on the show. This recipe originates from a pub in Charlottetown, PEI called The Churchill Arms. This stew is rich and hearty, flavoured with a can of Guinness beer and then topped with a golden mashed potato cake, pure comfort food.

Chocolate Holiday Bark

 



My friends Sherri and Dave gave me this tasty chocolate almond bark a few years ago at Christmas and now I can't imagine a Christmas without it. With two kinds of chocolate, toasted almonds, dried cranberries and dried apricots all combined to make the most delicious treat. Great to give away for gifts, that is if you don't eat it all first.

 Carnitas are the Mexican version of pulled pork. It's traditionally made with pork shoulder (also known as pork butt) because of the higher fat content, which helps the meat stay super tender and juicy while it's cooked. The pork is first cooked in a slow-cooker and then crisped up in the oven. The meat is placed on a warm flour tortilla and topped with avocado crema, onions, cilantro and hot sauce. These have definitely become a fam
