This peach crumble pie is topped with a cinnamon spiced crumble. Serve with a scoop of vanilla ice cream for the ultimate summertime indulgence.
Pastry
1 cup flour
¼ teaspoon salt
¼ cup shortening
2 tablespoons butter
3 tablespoons cold water
In a bowl combine flour and salt, mix. Cut in shortening and butter with a pastry blender until mixture resembles coarse crumbs. Sprinkle with water and mix to make soft dough.
Filling
5 cups thinly sliced peaches (approx. 5-6 peaches)
¾ cups sugar
¼ cup flour
1 teaspoon cinnamon
Pinch of salt
In a large bowl combine peaches, sugar, flour, cinnamon and salt. Toss gently until well combined. Spoon filling in the pie shell.
Topping
¾ cup packed brown sugar
¾ cup large oats
½ flour
1 ½ teaspoons cinnamon
½ cup butter
In a bowl combine sugar, oats, flour and cinnamon. With a pastry blender cut in butter until crumbly. Sprinkle mixture over peaches. Bake at 425 F for 15 minutes. Reduce heat to 375 for another 30 - 35 minutes or until topping is golden and peaches are tender. Makes 6-8 servings
