Pumpkin Spice Loaf




This recipe was given to me from one of the sweetest gals at work who is an awesome cook. It is ideal to bake ahead and freeze. You will enjoy the fragrance in you house as these loaves are baking. 
Ingredients:

3 1/2 cups of white flour
1 cup of fresh ground oat flour *
1 1/2 tsp. salt
3 cup sugar
3 tsp. baking soda
1 tsp. nutmeg
3 tsp. cinnamon
1 tsp. allspice
1 tsp. cloves
3/4 cup raisins
3/4 cup of butterscotch chips

3/4 cup water
1 can pumpkin puree (796ml)
1 1/2 cups vegetable oil
6 eggs, beaten

Instructions:

Preheat your oven to 350.
Mix all your dry ingredients together until well mixed, then add all the wet ingredients and mix well. Fill 3 greased bread pans equally. Bake bread for 45 mins, and rotate bread in the oven if needed. Bake for another 15 minutes (60 mins total) and check if bread is done by sticking a clean butter knife into the center, if the knife/toothpick comes out mostly clean, you are good to take them out.

*You can take regular or large flaked oats and grind them in your coffee grinder.

If you don't have oat flour just grind regular or large flaked oats in your coffee grinder.
Grind until it is the consistency of flour
Combine wet ingredents
Combine the dry ingredients
Combine the wet and dry ingredients until well combined. Pour into three greased loaf pans and bake as per instructions.

Remove from oven when a tooth pick inserted comes out clean
