Lemon Sugar Snap Peas


This is an easy dish to make. The peas are sauteed and are table ready five minutes after they hit the pan. Those of you who are looking for new ways to prepare vegetables will enjoy them.



Ingredients

600-700 grams or 1 1/2 pounds fresh sugar snap peas
1 tablespoon extra virgin olive oil
1 teaspoon kosher salt
1 teaspoon garlic cloves (finely minced)
1 - 2 Tbsp lemon juice
3/4 teaspoon freshly ground black pepper
2 teaspoons lemon zest
Sea salt


Directions

Remove and discard the stem end and string from each sugar snap pod.

Heat the olive oil in a large saute pan over medium-high heat. Add the sugar snap peas, salt, garlic cloves, lemon juice and pepper and saute, tossing occasionally for 3 to 5 minutes, until the sugar snap peas are crisp tender.

Just before serving, sprinkle with sea salt and lemon zest.
