Cheesy Cornmeal Muffins

 
     




This is a good cornmeal muffin recipe. I usually make these whenever I make chili, they just go together like peanut butter and jam! I have made many cornmeal muffins recipes and my family rates this one as their favourite!




Preheat oven to 400 degrees


Ingredients:

1 Cup yellow cornmeal

1½ cup milk

½ Cup shortening

½ Cup Sugar

1 ⅓ Cup all-purpose flour

2 ½ teaspoons baking powder

1 teaspoon kosher salt

1 egg, beaten


1 cup shredded Cheddar cheese


Combine cornmeal and milk and set aside.

In another bowl, cream shortening and sugar together.

Add beaten egg to cornmeal mixture.

Add the cornmeal mixture to the shortening mixture, stir in gently.

Add flour, baking powder and salt, stir

Gently stir in cheese.

DO Not Over mix!!!

Divide between 12 medium muffin cups.

Bake in 400 degree oven for approximately 12-15 minutes.

Combine milk and cornmeal. Set aside for a few minutes.
Combine shortening and sugar, cream until smooth.
Beat egg, add to cornmeal mixture.
Add dry ingredients , stir to combine

Stir in grated cheddar cheese.
Bake in 400 degree oven for approximately 12-15 minutes.

Stir gently, do not over mix!!!
Divide among 12 medium sized muffin cups.
