Kitchen Sink Muffins

This recipe is a slightly modified version of a recipe from the Looney Spoon Collection Recipe Book.They are really moist and on the healthy side too! You can be quite creative with the ingredients. If you don't like raisins then add extra nuts. If you have kids than substitute chocolate chips instead of raisins.




Ingredients:
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon salt
1 cup well drained crushed pineapple or well drained chopped peaches
1 cup grated carrot
½ cup applesauce
½ cup brown sugar (packed)
¼ cup vegetable oil
1 egg
1 teaspoon vanilla
½ cup coconut
½ cup raisins or cran raisins (optional)
½ cup pecans or walnuts (chopped)

Directions:

Preheat oven to 375 degrees. Line a 12-cup muffin tin with liners and spray edges to prevent sticking. In a large bowl combine the flour, baking soda, cinnamon, salt, nutmeg. Mix well and set aside.

In another bowl combine the pineapple, carrots, applesauce, brown sugar, oil, egg and vanilla. Add the wet ingredients to the flour mixture. Combine just until dry ingredients are moistened. Fold in coconut, nuts and raisins.

Divide the batter among the 12 muffins cups. Bake for 20 minutes or until a toothpick inserted in centre of muffin comes out clean. Cool on a wire rack.
