Beach Salad

If you have ever tried the Beach Salad from Joey's restaurant you will LOVE this recipe. Its actually better and super easy to make!!!

Makes 4 servings

6 - 7 cups of fancy greens
1 cup cubed avocado
12 medium strawberries (sliced)
1/4 cup goat cheese (soft type)
1/4 cup candied pecans
lemon poppy seed dressing (recipe below)

Lemon Poppy Seed Dressing


2/3 cup canola oil
1/2 cup sugar
1/3 cup fresh lemon juice
1 1/2 tablespoons poppy seeds
2 teaspoons finely chopped onion
1 teaspoon Dijon mustard
1/2 teaspoon salt


Process 2/3 cup oil and remaining ingredients in a blender until smooth. Store in an airtight container in the refrigerator up to 1 week; serve at room temperature.Combine all salad ingredients with dressing and serve.

To candy your pecans, place 1/4 cup of pecans and 2 TBSP corn syrup and place in a single layer on parchment paper. Bake in a 325 oven for approx. 15-20 minutes mixing a few times (watch closely).

Use your favorite mixed greens

Chop and slice the avocado and strawberries

To make the dressing in a blender combine all the ingredient.

Blend well until combined

Pour into a container and store in fridge until ready to use.
Combine all ingredient and mix with dressing. Using your fingers pull  apart the goat cheese into small pieces and sprinkle over the salad.
