Darcy's Famous Mojito

This is one of my husband's favourtie drinks. I grow mint in a pot on my deck every year so he has fresh mint for his drink. It is light and refreshing, perfect for those hot summer days!!

5 mint leaves
½ teaspoon white granulated sugar
½ oz freshly squeezed lime juice
¾ oz simple syrup (see recipe below)
1 ½ oz white rum
Club soda

Simple Syrup:

Combine 1 Cup granulated sugar with one cup water in a small saucepan. Stir mixture and bring to boil, ensuring sugar is completely dissolved. Allow mixture to cool and store in the refrigerator.

Drink Instructions:

Place mint and sugar in a glass, using a muddler (or similar utensil) crush and press the mint trying not to shred it. Add ice, rum, lime juice and simple syrup to mint mixture. Stir to combine. Add club soda and ice. Enjoy!!
