PESTO & MOZZA STUFFED TOMATOES


These are so simple, delicious and super cute. You can use any tomato but this recipe uses the campari tomato. They are the size of a golf ball. You  can usually find them at Costco.

Ingredients:
  • 20 Campari vine ripened tomatoes (Costco usually always has them)
  • Pesto (your favorite jarred brand)
  • 1 ½ cups Mozzarella cheese (cubed)
  • salt

Directions:

Cut the tops off each tomato and core out the insides with a small melon baller. Clean out all seeds and sprinkle salt into the tomatoes.. Place cut side down on paper towel. The salt helps eliminate excess moisture. Chopped the mozzarella into small cubes and then combine with pesto sauce. Stuff each tomato using a small spoon. Serve imediately or refrigerate.

Take stems off and clean tomatoes.
Cut off tops and using a melon baller remove insides.
You will need your favorite pesto and mozzarella cheese.
Chop the cheese into small cubes and combine with the pesto.
Using a small spoon the tomatoes with pesto/cheese mixture.
