ORANGE & DATE BLENDER MUFFINS

This is a yummy and simple muffin recipe. You mix the liquid ingredients in a blender and you actually add a whole orange!! Yes the peel and all!!  The fresh orange flavour combined with the sweet dates is irresistible. It is a fun recipe to make and even better to eat. Try it you won't be disappointed.

Ingredients:

1 whole orange, peel included cut into quarters
½ Cup orange juice
½ Cup chopped pitted dates
1 egg
½ Cup butter
1 ½ Cup all purpose flour
1 tsp baking powder
1 tsp baking soda
¾ tsp salt
¾ Cup sugar
dates to decorate muffin tops

Directions:

In a blender, blend orange, orange juice, dates, egg and butter. Blend until smooth.
In a mixing bowl combine flour, baking powder, baking soda, salt and sugar. Add orange mixture and stir until just combined.
Spoon into muffin tins lined with cupcake liners.
In a 400 degree pre-heated oven bake muffins for approximately 15 minutes.
Makes 12 muffins
To garnish place a small piece of date on each muffin when they just come out of the oven.

In blender add juice,orange, dates, eggs and butter.


Blender until smooth.


Yes I know it is hard to believe there is a whole orange in there.


Combine dry ingredients.


Add blender mixture to dry ingredients and stir until combined.


Line muffin tin with cupcake liners.


Spoon mixture into muffin tin equally.


Bake.


Cool on wire rack.


While cooling add a sliced date to each muffin.


Eat and Enjoy!

  1. These muffins are truly to DIE for!! DEliceous!! I lost the recipe for a while and I panicked as I didn't know WHO'S site it was. But, I NEVER give up to easily and am SO glad I found it again!!

  4. Found it! Food that Really Schmecks from 1979! My mum used to make it for us. So good! My standby muffins, for sure.
