Blueberry Vodka Lemonade


If you are looking for a nice refreshing summer cocktail you need to try this one. The mix of the lemonade and blueberry flavors make for a delicious and eye pleasing cocktail! 

Ingredients:
2 oz. freshly squeezed lemon juice
3 oz. 7-up or sprite (you can use diet if you prefer)
2 oz. blueberry simple syrup
1 1/2 oz. vodka
Plenty of ice


Blueberry Simple Syrup:
1 C granulated sugar
1 1/2 C water
1 C blueberries

Instructions:

Fill glass with ice, pour lemon juice, 7-up, blueberry syrup, and vodka. Stir well and garnish with lemon wedges and blueberries.

For Blueberry Simple Syrup:

Put the sugar, water, and blueberries in a medium-size saucepan and bring mixture to a boil. Let boil until sugar dissolves and then lower to a simmer.
Let mixture simmer for 15-20 minutes, until the mixture thickens a bit and is a beautifully-deep purple.
Strain the mixture into a bowl, being sure to press down on the berries to extract as much juice as possible.
Cool in fridge.

Using a citrus juicer/squeezer squeeze your lemons (several lemons will be required depending how many drinks you will be making).
Store the fresh lemon juice in the fridge until ready to make the drinks.
Put the sugar, water, and blueberries in a medium-size saucepan and bring mixture to a boil, lower heat and simmer for 10-15 minutes.
Strain the mixture 
Store in fridge until you are ready to make the drinks.
