Peach and Blueberry Crumble

 






This is summer in a bowl!! Easy and quick and a crowd pleaser to say the least. Use fresh peaches and blueberries.


Ingredients:

4 Cups fresh peaches, peeled and sliced
4 Cups fresh blueberries
⅓ Cup brown sugar
1 ½ Tablespoon Cornstarch
1 1/2 Tablespoon butter, melted

Topping:
1 ¼ Cup flour
⅔ Cup chopped pecans
1 Cup brown sugar
½ Cup butter, melted

Gently toss peaches and blueberries with brown sugar, cornstarch and butter.
Arrange evenly in a 9x13 inch greased baking pan.
In another bowl combine flour, pecans, brown sugar.
Drizzle butter over this mixture and toss with a fork to form coarse crumbs.
Sprinkle over fruit.
Bake in 350 degree oven until fruit is bubbling and tender and crumble is golden, approximately 45 minutes to 1 hour.

Combine peaches and blueberries.

Add brown sugar.

Add cornstarch and butter.

Arrange fruit evenly in a 9x13 inch greased baking dish.

Combine topping ingredients.

Sprinkle topping over fruit.

Bake in 350 degree oven for 45 minutes to 1 hour.

You can serve with vanilla ice cream but it is delicious on it's own too!!
