Fresh Cucumber Dill Salad

This dressing is very quick and easy to make and is very creamy. If you like your dressing thinner just add more lemon or vinegar.




Ingredients:

½ cup mayo
½ cup sour cream
2 Tbsp rice vinegar
½ teaspoon ground sea salt
1-2 Tbsp fresh dill (chopped)
1 teaspoon lemon zest
2 Tablespoons lemon juice
2 - 3 garlic cloves (finely chopped)
1/8 teaspoon ground pepper


2 english cucumbers (seeded)

Instructions:

In large bowl, whisk ingredients for dressing until combined. 

Peel, seed and slice cucumber, toss and combine with dressing.

In large bowl, whisk ingredients for dressing.

Mix until well combined.

Peel two english cucumbers.

Remove seeds the cucumbers. Use a small spoon or a melon baller.

Slice cucumbers and place in a medium serving bowl.

Combine with dressing. Keep refrigerated until ready to serve.
