This is one of our favourite Panini wraps. I love to make a bunch and wrap them up so they are ready to throw on the Panini maker. They are filled with steak, bell peppers, onions, cheese and chipolte sauce.
Ingredients:
1 Kg or 2 lbs of Steak, cut thin, across the grain. (I used Beef Tenderloin)
1 green or yellow pepper, cut into strips
1 red pepper, cut into strips
1 purple onion, cut into thin slices
Tex Mex Seasoning
Olive oil for cooking meat and vegetables
Spicy Chipolte Sauce
Monterey Jack Cheese
Flour Tortillas (large, 9 inch)
Slice steak thinly across the grain.
Heat frying pan with a little oil and brown and cook meat. Season meat with Tex Mex seasoning. Brown in batches to not overcrowd the meat in the pan. Set aside.
Heat a little more olive oil in add onions and peppers. Cook until soft.
Add meat to the pepper/onion mixture and combine. Set aside.
Place some of this mixture onto a tortilla, add some chipolte sauce and top with grated cheese.
Wrap each tortilla individually.
Store in the refrigerator until ready to cook on panini maker.
When you want a wrap simply heat in microwave for 20-30 seconds to take the chill off and then place on panini grill.

Heat a little olive oil in a frying pan and brown steak. Season with Tex Mex seasoning. Set meat aside. |
Add more olive oil to the pan. Cook the onions alone for a few minutes. |
Add peppers. Cook until tender. |
Add steak back to the pan, Stir to combine. |
Add steak mixture to a flour tortilla. |
Put desired amount of sauce over steak mixture. |
Top with cheese. |
Roll up wrap ensuring you tuck in the sides so nothing leaks out while cooking. Place on hot panini maker. |
Looks like it is ready. Yum! |
