Granola Muffins


I love granola and muffins, so when I found this recipe combining the two I had to try it. This muffin is very tasty and satisfying. I used our granola recipe from this blog, it is loaded with nuts,seeds, dried cranberries and currants, but you can buy a store brand and add cranberries and currants.



Ingredients:
3 Cups granola cereal(I use the recipe from this blog) If you use a store bought brand use 2 ½ Cups granola plus ½ Cup dried cranberries or ¼ Cup currant and ¼ Cup dried cranberries.

1 ¼ Cups all-purpose flour

1 ½ teaspoons baking soda

1 ½ teaspoons ground cinnamon

½ teaspoon salt

¼ teaspoon allspice

1 Cup buttermilk

1 Cup light brown sugar

½ Cup vegetable oil

½ Cup mashed banana

1 large egg

1 teaspoon vanilla extract




Directions:

Preheat oven to 375 degrees.

Line 12 muffin cups with cupcake liners.

In a large bowl stir together granola and the rest of the dry ingredients.

In another bowl, beat egg. Add buttermilk, brown sugar, oil, banana, and vanilla,stir.

Add wet ingredients to dry ingredients until just combined.

Divide among the muffin cups.

Bake for 18-20 minutes or until a wooden pick inserted comes out clean.

Combine dry ingredients
Combine wet ingredients
Add wet mixture to dry ingredients, stir to just combine.

Divide among muffin cups. Bake.
