Applesauce Bundt Cake



This is a aromatic moist snack cake. It is great for lunches as it holds up well.



Ingredients:


3 Cups all-purpose flour
1 ½ Cups sugar
½ Cup packed brown sugar
1 ½ teaspoons ground cinnamon
½ teaspoon ground cloves
1 teaspoon baking soda
1 teaspoon salt
3 large eggs
1 Cup unsweetened applesauce
½ Cup vegetable oil
¾ teaspoon vanilla extract
3 Cups peeled and chopped apples
1 Cup dried cranberries or ½ Cup cranberries and ½ Cup currants
Confectioners sugar for dusting the cake


Preheat oven to 350 degrees.
Grease and flour a bundt pan.
In a large bowl, whisk together the flour and the next six ingredients.
In another bowl, whisk together eggs,applesauce, oil, and vanilla.
Combine applesauce mixture into flour mixture.
Stir in apples, cranberries/currants.
Pour into the bundt pan.
Gently tap pan to remove any air bubbles.
Bake for one hour or until a wooden pick inserted into the centre of the cake comes out clean
Let cool for ten minutes on a wire rack.
Invert cake onto a wire rack and let cool completely. Dust with confectioners sugar if you like.

Butter and flour bundt pan.

Whisk eggs.

Add the rest of the wet ingredients.

Add dry ingredients to the wet ingredients.

Stir to just combine.

Add cranberries.

Spoon into bundt/tube pan, and bake.

Cool on wire rack for ten minutes.

Invert cake onto a wire rack.

Dust with confectioners sugar.
