Brownies





I have made many brownies over the years, but this one is definitely my favourite. Moist and chewy and not too sweet. This is a quick and easy recipe and believe me a real crowd pleaser!



Makes 36 to 48

BROWNIES

1 CUP BUTTER

2 CUPS SUGAR

1⁄4 CUP COCOA POWDER

4 eggs, beaten

1 TSP VANILLA

1 CUP FLOUR

1 CUP CHOPPED WALNUTS OR PECANS

Icing

2 CUPS ICING SUGAR

2 TBSP BUTTER (melted)

2 TBSP COCOA POWDER

2-3 TBSP BOILING WATER

2 TSP VANILLA
 

TO MAKE BROWNIES

CREAM TOGETHER BUTTER, SUGAR AND COCOA POWDER.

MIX IN BEATEN EGGS AND VANILLA.

ADD FLOUR AND STIR.

FOLD IN NUTS.

BAKE IN A GREASED 13- x 9-inch pan at 350°F (180°C) FOR 40 to 45 MiNUTES. TOP WILL APPEAR TO BE UNDERDONE (FALLS IN MiDDLE) BUT DON’T OVERCOOK. SHOULD BE MOIST AND CHEWY.

TO MAKE ICING

BEAT ALL INGREDIENTS TOGETHER WHILE BROWNIES ARE BAKING. Spread ON TOP AS SOON AS BROWNIES COME OUT OF THE OVEN. IT WILL MELT INTO A SHINY GLAZE.

Beat together butter, sugar and cocoa powder.

Beat eggs and vanilla together in a small bowl and then add the mixture.

Add chopped nuts.

Add mixture to a greased 9x13 inch pan.

Spread mixture evenly in pan. Bake in 350 degree oven for 40-45 minutes.

When brownies come out of the oven spread icing over warm brownies.
