Lemon Loaf



This is a incredible lemon loaf, bursting with lemon flavour. When the loaves come out of the oven the bottom of the loaves are drizzled with a lemon syrup and then once cooled the top of the loaves are drizzled with a lemony glaze. This recipe comes from Ina Garten and will not disappoint!!



Ingredients:

1 cup butter
2 ½ Cups granulated sugar( 2 cups for the loaf and ½ Cup for the lemon syrup)
4 large eggs
⅓ cup lemon zest about 6 lemons
3 cups all purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon kosher salt
¾ cup fresh lemon juice( ¼ cup for the loaf and ½ cup for the syrup)
¾ cup buttermilk
1 teaspoon pure vanilla

Glaze:

2 Cups icing or confectioners sugar

3 ½ Tablespoons fresh lemon juice

Directions:

Preheat oven to 350 degrees.
Grease, flour, and line the bottom of two standard loaf pans with parchment paper.
Cream butter with 2 cups granulated sugar until light and fluffy.
Add eggs, one at a time, mix well.
Add lemon zest.
In a bowl add flour, baking powder, baking soda, and salt.
In another bowl combine ¼ cup lemon juice, buttermilk, and vanilla.
Add flour and buttermilk mixtures alternately with the butter mixture, beginning and ending with flour.
Divide batter between both pans.
Bake for 45 minutes to 1 hour, or until toothpick comes out clean.
While loaves are baking make lemon syrup.
In a small saucepan combine ½ Cup granulated sugar with ½ cup lemon juice. Cook until the sugar dissolves. Remove from heat.
Remove cooked loaves from oven, allow to cool for ten minutes in the pans.
Invert loaves onto a wire rack set over a tray or baking sheet. Spoon lemon syrup over the bottom of the cakes. Allow to cool completely.
Make the glaze: combine icing sugar and lemon juice, mix with wire whisk until smooth.
Turn cakes right side up. Pour the glaze over loaves allowing glaze to dribble down the sides.

Cream butter and sugar until fluffy. Add eggs one at a time. Add lemon zest.


Grease, flour and line 2 loaf pans with parchment paper. 


Combine buttermilk, 1/4 cup lemon juice and vanilla in a bowl. Combine flour, baking soda, baking powder and salt in another bowl.


Alternately add buttermilk mixture and flour mixture to butter mixture beginning and ending with flour.








Divide batter into two loaf pans. Bake into a 350 degree oven for 45 minutes to one hour.


In a small saucepan combine 1/2 Cup granulated sugar and 1/2 cup lemon juice. Cook until sugar dissolved. Remove from heat.


In another bowl combine icing sugar and lemon juice, whisk until smooth.


When loaves are cooked remove from oven and allow to cool for ten minutes on a wire rack with a baking sheet under rack.


Remove loaves from the pans. Bottom sides up.


Spoon lemon syrup over the loaves. Cool completely.


Once loaves are cooled turn right side up and drizzle with icing.
