Crab Cakes




These are awesome crab cakes. Crispy on the outside and flavouful and moist on the inside. Served with a tasty aioli dip. This recipe was created with our good friends Dave and Sherri while on vacation on Vancouver Island. We had leftover crab from one of our big feasts and decided to make crab cakes. We were camping and so we had to use what we had available in our trailers and this is what we came up with. The only problem with this recipe is that there is never enough!!!



Ingredients:

½ Cup Mayonnaise
1 egg
2 Tablespoons green onions
2 Tablespoons chopped fresh dill
1 Tablespoon lemon juice
¾ Teaspoon Old Bay Seasoning
1 Teaspoon chopped garlic
½ teaspoon ground cumin
½ Teaspoon curry powder
½ Teaspoon lemon pepper
1 pound cooked crab meat
Salt and pepper
Louisiana hot sauce
1 ¼ Cups Panko crumbs
Vegetable oil for cooking

Directions:
In a bowl, whisk together the mayonnaise, egg, green onions, dill, lemon juice, Old Bay Seasoning, garlic, cumin, curry powder and lemon pepper.

Gently fold in the crab meat. Season to taste with salt, pepper and Louisiana hot sauce.

Add Panko crumbs until everything loosely binds together.

Form into crab cakes of your desired size.

The crab cakes can be chilled at this point until ready to cook.

Heat vegetable oil in frying pan, about ¼- ½ inch deep.

Fry crab cakes until golden brown on both sides.

Remove and drain cakes on a papertowel.

Serve with a garlic & chili aioli sauce. I love Costco’s Culinary Treasures Brand.

Whisk together mayonnaise, egg, green onions, dill, lemon juice, Old Bay seasoning. garlic, curry, cumin and lemon pepper.

I found cooked crab meat at Costco.
 
Add mayonnaise mixture and Panko crumbs to crab meat, stir to combine.

Form into patties. Any size works. I prefer mine small. At this point you can either cook them up or put them in the fridge until you are ready to cook and serve them.

Heat vegetable oil and begin frying the patties until they are golden brown.

These are looking good. Remove cooked patties to a paper towel to drain.
Serve with a aioli sauce.
