These yummy potatoes are quite versatile. You can serve them as a side dish with a meal or as an appetizer. You can also make ahead and simply reheat them quickly in the oven. |

Ingredients:
4 baking potatoes, cut into 1/2 inch slices
1/4 cup melted butter
8 slices bacon - cooked and crumbled
8 ounces shredded Cheddar cheese
1/2 cup chopped green onions
Directions:
Preheat oven to 400 degrees F (200 degrees C).
Slice potatoes into 1/2 inch slices and either combine with melted butter in a bowl or brush both side of potato slices with butter; place them on an ungreased cookie sheet lined with parchment paper. Bake in the preheated 400 degrees F (200 degrees C) oven for 30 to 40 minutes or until lightly browned on both sides, turning once.
When potatoes are ready, top with bacon, cheese, and green onion; continue baking until the cheese has melted

Slice and place potatoes in a bowl |
Pour the butter and mix well so each slice has butter on it. |
Place the butter coated potato slices on a large cookie sheet lined with parchment paper and bake until golden brown. |
You will need grated cheddar, bacon bits and green onions. |
Remove from oven. |
Sprinkle the bacon bits over each round |
Sprinkle with green onion |
Finally with the grated cheddar cheese. |
Place back in oven until cheese is melted and serve warm. |
