Crispy Smashed Potatoes

This is my new favourite way to bake potatoes.  You just bake them, smash them, and then drizzle with olive oil and a little salt and pepper and back in the oven for the final bake. Yummy!!


Ingredients:

Small new red potatoes 15-18
3/4 Cup water
Olive oil approximately 6-8 Tablespoons
Kosher salt
Freshly cracked black pepper




Place potatoes on a rimmed baking sheet and pour water into pan.

Tightly wrap sheet with aluminium foil. Bake in a 500 degree oven for 25-30 minutes until  a knife easily slips in and out of potatoes easily.

If there is any water remaining in the pan blot dry. Drizzle with half of the olive oil and roll the potatoes in the oil .Evenly space the potatoes on the baking sheet. 

Place another baking sheet over-top of the potatoes. 

Press uniformly until the potatoes are roughly 1/3 to 1/2 inch thick. 

Nicely smashed.
Sprinkle with Kosher salt and freshly cracked black pepper. Drizzle with the remaining olive oil. Bake in the oven  for another 20-30 minutes until the potatoes are browned.
