Crack Caramel Popcorn

We love caramel popcorn and  this is such a yummy simple recipe. This popcorn is addictive, combining the flavors of sweet and salty. Once you start eating this you won't be able to stop, so we suggest sharing this with family and friends. Warning: Do not think you can make this and only have a little. This popcorn is dangerous if you are alone with it.  Please eat with a group!!!

Ingredients:
½ Cup butter
1 Cup brown sugar
¼ cup light corn syrup
2 teaspoons kosher salt
½ teaspoon baking soda
½ teaspoon vanilla extract
12 Cups popped popcorn

Preheat oven to 300 degrees. Line a rimmed baking sheet with tin foil and spray with nonstick spray or vegetable oil.
Melt butter in a medium sized pot over medium high heat. Add brown sugar and corn syrup, stir to combine. Bring the mixture to a boil, then reduce the heat to medium low and let simmer undisturbed for 4 minutes. Stir, then continue to stir for an additional 4-6 minutes, stirring every 30 seconds or if you have a candy thermometer cook until soft ball stage 240 degrees. Remove from heat and add salt, baking soda, and vanilla.
Pour hot mixture over the popcorn in prepared pan, stir to distribute the sauce over popcorn.
Bake for 30 minutes stirring every 5 minutes.
Remove from oven onto a wax paper-lined counter top.
