HOMEMADE GRANOLA





This granola recipe was adapted from a lovely Bed & Breakfast in Sonoma, California. We started making our own granola in 2006 and it has become a main staple in our homes. We enjoy eating this granola with yogurt or with warm applesauce. When we are trying to loose weight we find that this granola is very satisfying and keeps our hunger at bay. Our husbands add it to a boxed cereal to increase fibre and flavour. Our kids often eat it with ice cream or simply eat it alone as a snack. We use this recipe as a base ingredient for granola bars and we will share this recipe in a future post. We often make up a batch and share it with our co-workers and close friends. We hope it becomes your favourite too!

Ingredients:
5 cups uncooked large oats
1 cup slivered almonds
1 cup pecans chopped
1 cup sesame seeds
1 cup flax
1 cup wheat germ
1 cup shredded coconut
1 cup raw unsalted sunflower seeds
1 cup pumpkin seeds (unsalted)
1 cup canola oil
1 cup honey
1 cup currants
1 cup dried cranberries

Directions:

Preheat oven to 325°. Combine dry ingredients except currants and cranberries in a large bowl and mix well. Combine oil and honey together in a heat proof bowl or pyrex measuring cup. Place in microwave and heat for 2-3 minutes and mix well. Pour over dry ingredients and mix well. Spread mixture onto 2 cookie sheets or large roaster and bake for approximately 30 minutes. Stir granola mixture every ten minutes.When granola is golden brown, remove from oven and cool. When cool, add cranberries and currants. Store in air tight container. Place 5 Cups Oats in large bowl

Add remaining nuts and seeds except cranberries and currants

Stir to combine ingredients

Combine honey and oil 

Microwave for 2-3 minutes and stir to combine

Pour in honey mixture

Stir to combine

Line a roasting pan with parchment paper

Pour granola mixture into pan

Bake granola until golden brown

Let mixture cool for approximately 10 minutes and add currants and cranberries

Store in airtight container or in freezer

  2. The approx. calories per 1/4 cup are 159 and per TBSP. 40. We often add a few tablespoons to a low fat yogurt with a few sliced berries. It is worth the calories as it keeps you satisfied and full all morning. I also love it with warmed apple sauce. We would love to hear what you think of it after you make it.
