CORN FLAKE TOFFEE COOKIES (NO BAKE)



This is a quick and easy recipe that has been a family favorite for several decades, especially with the kids, however the adults love them too! Depending where you live Mackintosh Toffee may not be available but any brand or type of toffee will work. 
Ingredients:
1 170 gram or 6 oz bag of Mackintosh Toffee
3 Tbsp butter
1 Tbsp cream or milk
1 tsp vanilla
¼ cup coconut
2 1/4 cups Corn Flakes



Update: I noticed this year that there is a 246 gram bag of Mackintosh Toffee which converts to 8 oz).
1 246 gram or 8 oz bag of Mackintosh Toffee
4 Tbsp butter
1 Tbsp + 1 tsp cream or milk
1 tsp vanilla
1/4 cup + 1 Tbsp coconut
3 cups Corn Flakes
Directions:

In a medium sized (approx 2 quarts) pot melt the toffee, butter and cream together over medium heat. Stirring constantly until completely melted. Add vanilla. Remove from heat. Stir in corn flakes and coconut. Drop mixture by a teaspoon onto wax paper, form into small mounds. Cool cookies on wax paper. Store in a container with a loose fitting lid as cookies will loosen up in an airtight container. This recipe can be easily doubled. Cookies freeze well. This recipe makes approximately 32 cookies depending on the size that you make them.

Gather together ingredients

If Macintosh Toffee is not readily available, use a comparably substitute

Remove wrappers from toffee and place in saucepan with butter and cream

Stir until melted

Add corn flakes

Drop from teaspoon and form into mounds

  3. I found a recipe for Mackintosh Toffee using sweetened condensed milk. Made the toffee (makes about 600 grams, enough for about 60 + cookies. Worked well.
