Betty's Layered Salad



This recipe came to us through our good friends mother-in-law. She is a talented artist and not surprising that this salad looks like a piece of art! The beauty of this salad is that it can be prepared ahead of time. Great for pot lucks and large group gatherings.

Ingredients:

In a large clear glass bowl carefully and neatly layer the  vegetables in the following order:
6 cups Lettuce (variety of your choice)
1 cup thinly sliced radishes
1 cup thinly sliced celery
2 cups thinly sliced mushrooms
1 finely chopped red pepper
1 finely chopped green pepper
1 medium finely chopped purple onion
1 ½ cups frozen peas
4 hard boiled eggs (grated)
1 ½ cups grated cheddar cheese

1/2 Cup cooked crumbled bacon
Cherry tomatoes
1/4 Cup real grated parmesan cheese

Dressing:
1 cup of mayonnaise
2 Tbsp. white vinegar
2 Tbsp. granulated sugar


Directions:

Combine dressing ingredients and pour over salad.
Chill salad for 4 or more hours before serving.
Prior to serving garnish with cherry tomatoes, cooked crumbled bacon and sprinkle with grated parmesan cheese.
Quantities may vary depending on the size of the bowl.

Assemble and chop all ingredients.

Add lettuce to the bowl

Top with sliced radishes

Celery

Mushrooms

Green and red pepper

Purple onion

Frozen Peas

Eggs

Cheddar cheese

Salad dressing 

Garnish with tomatoes, bacon and parmesan cheese

Piece of Art!!!
