RUMAKI (BACON WRAPPED WATER CHESTNUTS)

Here is another fantastic crowd pleasing recipe from the 2Sisters. We are very confident that you will agree. Once you serve these to your family/friends, they will be begging you to bring them to the next function. Doubling this recipe will not be a mistake. We first tasted these mouth watering morsels years ago at a Women's Only Weekend function. We are very grateful to my  dear sister-in-law who was responsible for introducing us to these to these tasty & tangy temptations. All to often the Rumaki disappears so quickly that someone inevitably misses out and believe us they are not happy!!!! So if you want to ensure everybody gets there share again we stress "double the recipe". ENJOY!!!

Ingredients

1 pound sliced bacon
2 cans (8 ounces or 227 ml each) whole peeled water chestnuts, rinsed and drained
1 cup ketchup
3/4 cup packed brown sugar
1 Tbsp Worcestershire sauce
1 Tbsp white vinegar

How to make Bacon Wrapped Water Chestnuts

  1. Cut bacon strips into thirds or halves depending on the size of the water chestnuts; wrap a strip around each water chestnut and secure with wooden tooth pick.
  2. Place each water chestnut in an un-greased baking dish (9 X 13)  and bake at 400 degrees for 30 - 40 minutes or until bacon is crisp.
  3. Meanwhile, in a small bowl combine ketchup, brown sugar, vinegar and worcestershire sauce and stir until sugar dissolves.
  4. Remove Rumaki and transfer to  another smaller sized oven proof dish and spoon the sauce  carefully over Rumaki.
  5. Return to the a 350 degree oven for 20 minutes until sauce is bubbling.
If preparing Rumaki ahead of time complete steps 1 - 4, and refrigerate. Heat just before serving (step 5).
