These ribs are a family favourite. This recipe comes from the "Company's Coming" Slow cooker cookbook. I like to cook them in the slow cooker until tender but not fall off the bone tender and then finish them in the oven. This allows the sauce to thicken and also for the ribs to get a little crispy. Tender and tasty!! Great for week nights but special enough to serve to company.
Amazing Slow Cooker Baby Back Ribs
Ingredients:
Brown Sugar Sauce:
2 Cups packed brown sugar
¼ Cup all purpose flour
⅓ Cup water
½ Cup white vinegar
2 Tbsp soy sauce
2 Tbsp ketchup
¼ Tsp ground ginger
¼ Tsp ground garlic powder
3-4 pounds of meaty pork baby back ribs.
Directions:
In a medium saucepan combine brown sugar and flour. Add water. Stir. Add the next 5 ingredients. Heat mixture and stir until boiling. Once sauce has thickened remove from heat.
Cut ribs into 2 or 3 rib sections. Layer ribs in a suitably sized slow cooker, spooning sauce over eacher layer. Cover and cook on low for 10-12 or on high for approximately 5-6 hours. Cook until the meat is tender but not so much that the meat is falling off the bone. Remove ribs from slow cooker and place in a 9x13 inch pan and spoon some of the sauce over the ribs. Just before serving put ribs into 375 degree oven and bake until sauce is bubbling and the sauce is carmelizing and crisping up a little. Watch carefully as the sauce can burn quickly.
I often serve this with scalloped potatoes or homemade macaroni and cheese. Yum!
