Lasagna Loaf

This is a great weeknight or busy weekend recipe. It comes from one of my  favourite cookbook authors Sandi Richard who lives right here in Alberta.  I have made many of her recipes and have all of her books. I like to serve this with a nice tossed salad. My family loves this meal and it has become one of our favourites.

Earls Santa Fe Chicken Salad with Peanut Lime Vinaigrette

Here is another one of my favourite salads from Earls and it is delicious. I serve this salad family style on a large platter but you can serve on individual plates. This salad is fresh, healthy, tasty and satisfying. I served a small bowl of the Black Bean Soup(recipe on this blog) before the salad

Earls Spicy Santa Fe Black Bean Soup

I love Earls black bean soup and was very happy to get a copy of the new Earls cookbook for my birthday this year. This was the first recipe I tried in the book and it did not disappoint. If you like black bean soup then you must try this. The dried turtle black beans are easy to find in the grocery store.

Chocolate Beet Cake

This is a great moist chocolate cake thanks to the beets. My son loves this cake and he gives it rave reviews whenever I make it. You can make this cake the day before you need it as it gets moister the following day.

Halloween Popcorn Balls

This recipe comes from the Pioneer Woman, "A Year of Holidays". I like these popcorn balls because they are soft and not tooth chippers. You can pop your own popcorn or buy it. The popcorn is popped with sugar so it is actually Kettle corn. I have a Whirly Bird popcorn stovetop popper but you can just use a pot. Candy corn and peanuts are added for a nice sweet and salty touch. If you don't want to add candy corn you can add Reeses Pieces or confetti sprinkles.
