Lasagna Loaf


This is a great weeknight or busy weekend recipe. It comes from one of my  favourite cookbook authors Sandi Richard who lives right here in Alberta.  I have made many of her recipes and have all of her books. I like to serve this with a nice tossed salad. My family loves this meal and it has become one of our favourites.



 Lasagna Loaf

Serves 4-8 depending on appetites

Ingredients:

1 Tablespoon olive oil or vegetable oil
8-10 mushrooms sliced
1 small  onion finely chopped
1 teaspoon fresh garlic or from jar
½ Cup green or red pepper diced
½ lb or 250 g ground beef ( I use lean ground beef).
1 jar (645ml or 24fl oz) pasta sauce. I used  Neuman’s Own  Marinara sauce.
I loaf of French bread
1 Cup cottage cheese
½ Cup grated Parmesan cheese
4 Cups grated/shredded mozzarella cheese

Directions:

Preheat oven to 425 degrees F.
Heat oil in a frying pan. Add sliced mushrooms. Cook until nice and golden brown.
Add onions and peppers and continue cooking until soft.
Add garlic. Cook for another minute.
Add ground beef, stirring occasionally until meat is no longer pink.
Add pasta sauce, stir and continue cooking until heated through.
Remove from heat.
Slice the bread lengthwise.
Place the bread on aluminum covered baking sheets
Remove most of the white bread from the centre of each side with your fingers.
Smear about 1 cup of the sauce on the bottom of each side of bread.
Dollop and spread 1/4 cup cottage cheese over the meat sauce.
Next sprinkle ⅛ cup Parmesan cheese on each half.
Then sprinkle 1 cup of mozzarella cheese on each half.
Repeat this layering process again on each half.
Place in preheated oven for about 15 minutes or until the cheese is bubbling and looking golden.Slice into serving size pieces.
Serve with a tossed salad.

Add onions and peppers. cook until soft. Add garlic cook for another minute.

Add ground beef and cook thoroughly.

Add pasta sauce. Cook until heated thorough.

Slice french loaf in half and place both pieces on baking sheet. Remove the bread with your fingers from each half. I know I only have a picture on one half but you use both halves. I am easily distracted!

Smear 1 cup of meat sauce on each half. Then top meat with 1/4 cup of cottage cheese. Then sprinkle with 1/8 cup of Parmesan cheese on top of cottage cheese.Top with 1 cup of mozzarella cheese and then repeat. Bake in 425 degree oven for about 15 minutes. 



Slice and serve.
