This is a super easy cookie to make. The center of the cookie is a MINI peanut butter cup.
The cookie dough contains three ingredients, crunchy peanut butter, brown sugar and a egg. All you do is mix the cookie dough together and then divide the dough between a 24 cup mini-muffin pan. Bake for 10 minutes and then immediately stuff each cookie with a Reese's peanut butter cup.
This is a great gluten free cookie.
Peanut Butter Cup Cookies
Makes 24 cookies
Ingredients:
24 individually wrapped MINI peanut butter cups
1 Cup crunchy peanut butter
¾ Cup brown sugar
1 large egg
Flaky sea salt (optional)
Preheat the oven to 350 degrees F.
Unwrap all the peanut butter cups.
In a large bowl combine the peanut butter, brown sugar and egg.
Using a hand mixer, beat mixture until totally combined.
Pinch off tablespoon portions and place into a 24 cup mini-muffin pan.
Gently press the cookie dough.
Bake until the edges are golden and crisp and the cookies are puffed, about ten minutes.
Remove from oven and immediately press a peanut butter cup into the centre of each cookie so that each cookie has a nice little rim of cookie surrounding it.
Sprinkle a little flaky salt on each one if you want.
Let cookies sit for about 10 minutes and then remove from pan.
Use a butter knife to remove from the pan.
