I have been wanting to post this recipe for several years now but one of the essential ingredients called Rotel, which is a combination of finely chopped tomatoes and green chilies was only available in the USA. Whenever I would go south of the border I would always bring home a good supply of Rotel. I now see it on the shelves in the grocery stores. I usually shop at Superstore and they have it there consistently. Rotel is also good in chili for that extra little pizzaz! I love eating the salsa with hint of lime taco chips. This makes a big recipe, but don't worry it is so good you will have no problem gobbling it up.
Quick Salsa
1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
½ cup Chopped Onion
2-3 cloves Garlic, Minced
1-2 whole Jalapeno, Quartered And Sliced Thin
1/4 teaspoon Sugar
1 teaspoon Salt
1 teaspoon Ground Cumin
1-2 cups Cilantro (more To Taste!)
1 juice of a whole lime
INSTRUCTIONS
Note: this is a very large batch. Recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.
Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you'd like---I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.
Store the salsa in the refrigerator.
