Breakfast Granola Cookies


I have been looking for a granola breakfast cookie for a while. Although these cookies make a great midday snack as well. I found this recipe on Pinterest and one of the reason that I love them is that it uses two ripened bananas and believe me I always seem to have a couple of ripe bananas. A girl can only eat so much banana bread or muffins!!
 These cookies are soft and chewy and packed full of nuts and dried fruit. Besides bananas, honey and peanut butter are the glue that keep these cookies together. I use my homemade granola (see recipe under the heading "Snacks and Munchies") but you can use store bought granola if you want. Do not store in a airtight container or they will get to moist and fall apart.



Ingredients

  • 1 ½ Cups granola (see recipe on this site)
  • 1 1/2 cups rolled oats
  • 1 cup dried fruit (raisins or cranberries)
  • 1/2 cup chocolate chips
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 ripe bananas, mashed
  • 1/2 cup peanut butter
  • 1/4 cup honey
Instructions

  1. Preheat your oven to 325 degrees.  
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the granola, oats, dried fruit, chocolate chips, cinnamon, and salt.  
  4. In a medium bowl, combine the mashed banana, peanut butter and honey.
  5. Add the wet ingredients to the dry ingredients and stir with a large spoon until well mixed.
  6. Using 1/4 cup of the cookie mixture for each cookie, spoon the mixture onto the parchment-lined cookie sheet.  Shape and flatten the cookies with your spoon.  They should be about 1/2-inch thick.  Keep in mind that they're not going to spread when you bake them.  
  7. Bake in the preheated oven for 15-17 minutes or until the edges start to turn golden.  Let the cookies cool on the baking sheet for at least 5 minutes before moving.


In a large bowl combine oats, granola, chocolate chips, cranberries or raisins, cinnamon and salt.

In another bowl combine mashed bananas, peanut butter and honey.

Add banana mixture to the oats/granola mixture.

Mix well.

Using a 1/4 cup measuring cup drop onto parchment lined cookie sheet.

Flatten a little with your hands as these cookies do not spread out.
