Whole Wheat Sandwich Bread




This is a very good bread recipe that uses a bread machine to make the dough and a special pan called a Pullman pan to bake the bread in. The pan is 13x4x4 inches and it comes with a lid. The lid is placed on the pan just before the bread dough reaches the top of the pan during the rising or proofing stage.The lid prevents the dough from rising any further and the finished product is a perfect rectangular loaf of bread. This bread is perfect for sandwiches as it doesn't have the typical dome shape most homemade bread has. Once the bread is cooled simply slice it up and store it in a plastic bag. I bought my Pullman bread pan online and if you like making bread this is definitely the pan to have.






Whole Wheat Sandwich Bread


1 cup lukewarm water


¼ cup olive oil


¼ cup honey


2 1/2 cups 100% Whole Wheat Flour


1 Cup Multi-Grain Flour


2½ teaspoons instant yeast, or 1 packet active dry yeast dissolved in 2 tablespoons of the water in the recipe


¼ cup milk


1¼ teaspoons salt

Instructions


) Add ingredients as per your bread machine manual. Place on dough cycle and allow to process.My machine I add the liquids first, salt, honey, then the flours and finally the yeast.


) Transfer the dough to a lightly oiled work surface, and roll under your hands to shape into a log long enough to fit the length of your pan. Place the log in a lightly greased loaf pan, cover the pan loosely with lightly greased plastic wrap, and allow the bread to rise for about 1 to 2 hours, or till the center has almost reached the top of the pan. Remove plastic wrap, grease underside of the pan lid and slide on. Allow to sit and rise another 30 - 60 minutes (to allow dough to reach lid). Towards the end of the rising time, preheat the oven to 350°F.


) Bake the bread for 15 to 20 minutes, then remove lid to the pan. Bake another 20 minutes. T


) Remove the bread from the oven, and turn it out of the pan onto a rack to cool. If desired, rub the crust with a little stick of butter; this will yield a soft, flavorful crust. Cool completely before slicing. Store the bread in a plastic bag at room temperature.


Make the dough in your bread machine. I love using the machine to make the dough. It does all the work for me!

This is my beautiful Pullman pan. It is 13x4x4 inches. 

Grease the pan well, including the inside of the lid.

Place the dough on a lightly oiled work surface. Shape the dough into a log long enough to fit the length of the pan.

Place the dough in the pan. Grease a piece of plastic wrap and place it loosely over the pan.

allow bread to rise for about 1-2 hours or until the center of the bread has just reached the top of the pan. You have to get the lid on so you don't want the dough above the pan.

Grease underside of the lid and slide it onto the pan. Allow to sit and rise with the lid on for another 30 minutes to allow the dough to reach the lid.  Leave the lid in place.

Preheat the oven to 350 degrees. When ready bake the bread with the lid on for about 15-20 minutes.

After about 15-20 minutes carefully remove the lid and continue baking the bread with the lid off for another 15-20 minutes.

Remove the bread from the oven and allow to cool on a rack. for 5 minutes. 

Turn the bread out onto the rack. Is that not a perfect loaf of bread? I could just stare at this picture all day lol!

Now take some butter and rub it all over the top of the bread.

Allow the bread to cool before slicing.
