This Crunchy Broccoli Salad combines a variety of crunchy vegetables along with cheddar cheese, bacon bites, dried cranberries, salty sunflower seeds, and a delicious creamy cider coleslaw dressing |
INGREDIENTS:
5 cups broccoli florets, uncooked
½ medium red onion, thinly sliced/chopped
½ cup roasted, salted sunflower seeds (you can use pecans or walnuts)
8 slices bacon, cooked and crumbled
¾ cup old cheddar cheese, grated or cubed
¾ cup craisins (you can use raisins as well)
DRESSING:
1 cup regular or light mayonnaise
1 tsp. grated red onion
¼ cup apple cider vinegar (you can use regular white vinegar)
1 Tbsp. dijon mustard
1 tsp. pepper
½ tsp. garlic powder
1 Tbsp sugar
Instructions:
Prepare and toss together salad ingredients.
Whisk together dressing ingredients.
Pour dressing over salad and mix well.
Cover and refrigerate, stir occasionally to blend salad and dressing.
Let stand in fridge a few hours to overnight.
