Darlene's Nana' s Raisin Cookies

My sister-in-law and I were reminiscing the other day about our Grandmother's and what good cooks and bakers they were. My sister-in-law remembers her Nana always having a batch of these raisin cookies when she visited. She shared the recipe with me and I made a batch and OMG are they ever good. So soft and chewy. Thanks Darlene.


Yield: 36 cookies

Ingredients:
1 cup raisins
½ cup water
½ cup butter or margarine
1 cup brown sugar
2 eggs
1 tsp vanilla
1 ½ cups flour
½ tsp. baking soda
½ tsp. cinnamon
½ tsp. salt
⅛ tsp. nutmeg
⅛ tsp. cloves
½ cup walnuts (chopped)

Instructions:

  1. Preheat oven to 350 degrees.
  2. Simmer raisins and water in saucepan over low heat until plump for 5-10 minutes. Cool
  3. Cream butter, sugar, eggs and vanilla.
  4. Measure flour and combine with,baking soda, salt and spices.
  5. Add alternately flour mixture and raisin/juice mixture to creamed mixture.
  6. Add nuts.
  7. Drop by rounded teaspoonfuls 2" apart onto ungreased or a parchment lined cookie sheet.
  8. Bake for 10-12 minutes
Simmer raisins and water in saucepan over low heat until plump for 5-10 minutes. Cool

Combine butter and brown sugar in a large bowl.

Cream in eggs and vanilla.

Measure flour and combine with,baking soda, salt and spices.
Add cooled raisins, liquid and flour mixture.


Chopped walnuts.
Add nuts to mixture and combine.

Dropped by rounded teaspoons to a lined cookie sheet,

Bake for 10-12 minutes and cool.
