| We absolutely love these oatmeal cookies. They are crispy and chewy. Everything a good cookie should be. | 
Ingredients
1 cup butter, softened
1/2 cup packed brown sugar
1 cup white sugar
1 egg
3/4 cup flaked coconut
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups rolled oats
Directions
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together butter, brown sugar, and white sugar. Mix in the egg. Add the coconut and mix. Combine flour, baking powder and baking soda; blend into creamed mixture. Stir in the rolled oats by hand. Drop dough by rounded tablespoons onto un-greased cookie sheets. Bake for 10 to 12 minutes in preheated oven, or until lightly browned. Cool on wire racks.

| Cream butter in a large mixing bowl | 
| Add white and brown sugar | 
| Mix in egg and coconut and continue to mix | 
| Add flour, baking powder and baking soda | 
| By hand mix in the large oats | 
| Mix until well incorporated | 
| Drop dough by rounded tablespoons onto ungreased cookie sheets (you can also use a small ice scoop) | 
| Bake for 10 minutes in a 350 degree oven |
