Strawberry Rhubarb Humble Crumble

This is such a delicious dessert!!! It is also very easy to put together and since strawberries and rhubarb are plentiful now is the time to make this!! You will get raves from anyone who eats this. I have rhubarb in my backyard and I always look forward to making this tasty treat in the springtime. If you don't have a rhubarb plant you can buy it fresh or frozen from the grocery store.



Ingredients:
3 Cups sliced strawberries
5 Cups sliced rhubarb
1 ¼ Cups sugar
¼ Cup minute tapioca

Topping:
1 ½ Cups flour
½ Cup sugar
¼ teaspoon salt
1 teaspoon cinnamon
¾ Cup chilled butter

Preheat oven to 375 degrees.
Combine rhubarb,strawberries, sugar and tapioca. Let stand for 15 minutes, stir occasionally.
In another bowl combine flour, sugar,salt and cinnamon. Cut in the butter until mixture is crumbly.
Pour fruit into a greased 9x13 inch baking dish.
Sprinkle crumble topping over the fruit mixture.
Bake for 40-45 minutes or until the topping is golden and the fruit is thickened and bubbly.

Serve warm with ice cream or alone is nice too.

Combine strawberries, rhubarb, sugar and tapioca.

Let stand for 15 minutes, stirring occasionally.

Combine flour, sugar, salt, cinnamon. Cut in chilled butter  until mixture is crumbly.

Pour fruit into a greased 9x13 inch baking dish. Sprinkle crumb mixture over fruit. Bake in 375 degree oven for 40-45 minutes.

Serve warm. Also nice with vanilla ice cream.
