Italian Sausage and Peppers Penne

Italian pasta dishes are the best and most classic comfort foods. This baked penne with Italian sausage is sure to get everyone to the table as soon as it comes out of the oven. My husband and I don’t make a lot of pasta, but every once in a while we do enjoy a good lasagna or a good Italian pasta dish. This is one of those favorites that we make every once in a while.

Ingredients:
454 grams hot
Italian sausage
1 large onions chopped
1 tablespoon virgin olive oil
1/ 2 red pepper (chopped)
1/2 orange pepper (chopped)
1/2 yellow pepper (chopped)
4 garlic cloves minced
1 tablespoon basil
1 tablespoon oregano
1 teaspoon salt
1 teaspoon pepper
2 tablespoon tomato paste
1 large jar of pasta sauce (400 ml)
1 box penne pasta (500 grams)
1 tub of ricotta cheese (250 gram)
1 jar of
Alfredo sauce (640 ml)
1 cup grated
Parmesan cheese
4 cups mozzarella cheese
1/3 cup of fresh basil

Directions:
Preheat oven to 350 degrees F.
Set a salted pot of water to boil. Add penne and cook according to directions on package. Drain and set aside.
Meanwhile, set a medium nonstick pan over medium-high heat heat oil and cook sausage, break up into small chunks with a wooden spoon and until browned, add chopped onions, and peppers and garlic and cook until tender about 6-7 minutes and add tomato paste, pasta sauce and spices and combine and simmer for 5 more minutes. Remove from heat and add Alfredo sauce, ricotta cheese and pasta and combine.

In a large casserole, layer 1/2 of the pasta mixture and top the layer with half of each of the cheeses and sprinkle with fresh basil and repeat. Bake until golden brown and hot throughout, about 30 minutes.
