Chicken Fajitas

These are scrumptious!! Loved by all who try them. I make a big batch and my family enjoys the leftovers for snacks or for an on the run meal. 


Fajita Marinade:
3-4 boneless,skinned chicken breasts sliced into strips
½ Cup vegetable oil
⅓ Cup freshly squeezed lime juice
⅓ Cup chopped onions
1 Tablespoon sugar
1 teaspoon dried oregano
salt and pepper to taste
½ teaspoon dried cumin
3-4 minced fresh garlic
1 fresh hot pepper minced (optional)

Combine marinade ingredients in a shallow casserole dish.
Add chicken strips, and refrigerate several hours.
When ready to cook, heat a small amount of vegetable oil in a frying pan and add chicken, cooking in small batches to ensure chicken browns. Cook chicken until nicely browned and thoroughly cooked. Transfer to a plate and continue cooking all the chicken.

Toppings:
Flour tortillas
Red Onion Slices
Green and Red pepper slices
Guacamole
Salsa
Sour cream
Grated cheddar cheese

In a frying pan saute onions and peppers until tender crisp.
I like to saute the onions separately as I like them cooked more than the peppers but this is just my preference.
Add cooked chicken to the vegetables and stir to combine and re-heat the chicken
To assemble: Warm the tortilla in the microwave just to soften it up. Add chicken mixture, followed by toppings and wrap.
This recipe doubles well.

Saute chicken.

Cook chicken until nicely browned and fully cooked.
 
Transfer cooked chicken  to a plate, st aside.
Slice vegetables.

Saute onions in a little vegetable oil.

Saute peppers.

Add onions and chicken to the peppers.
Stir and heat the chicken.

Add fajita mixture to a warm tortilla, followed by toppings of your choice.

Wrap tortilla.

Enjoy!!
