Chili




Here is a excellent chili recipe that I have made for my family for many years. Chili is a simple one pot meal that is great served with freshly baked corn muffins or biscuits and a nice green salad!! Make a big pot and then freeze some for another meal or serve the leftovers the next day. My family likes it spicy so I add hot salsa or fresh peppers but if you don't like it hot add mild salsa.




Ingredients:
2 pounds ground beef
2 medium onions or 1 large, chopped
4 cloves garlic, minced
1 green pepper, chopped
1 28oz or 796 mls can chopped tomatoes
1 14 oz or 398mls can crushed tomatoes
2 14oz or 398mls cans red kidney beans, drained and rinsed
1 14oz or 398mls can black beans, drained and rinsed
2 14oz or 398mls can beans with pork
2 Tablespoons tomato paste
½ Cup salsa medium or hot
1 Cup water
1 Cup cooked crisp and chopped bacon
1 ½ teaspoon cumin
2 Tablespoons chili powder
½ teaspoon freshly ground pepper
1 teaspoon kosher salt

Directions:
In a large pot, brown ground beef, drain excess fat off.
Add onion and green pepper to the ground beef and continue cooking until the vegetables are tender.
Add garlic, and cook for a couple more minutes.
At this point you can transfer meat mixture to a slow cooker or and add the rest of the ingredients, or add the rest of the ingredients to the pot and continue cooking chili on the stovetop or oven.
Simmer chili for at least 2 hours or in oven at 325 degrees. Cook in slow cooker on low for 6 hours approximately.
Serve with fresh bread,corn muffins or biscuits and a green salad.

Brown beef and drain off any excess fat.

Add onions and green peppers. Cook until vegetables are soft.
Add garlic.

Add salsa and seasonings.

Drain and rinse black beans and kidney  beans.

Stir in beans.

Add cooked bacon.

Add diced tomatoes and crushed tomatoes.

Add baked beans, tomato paste, and water.

Simmer on stove top, slow cooker  or in oven for at least 2 hours.
