Darcy's Famous Mojito

  
This is one of my husband's favourtie drinks. I grow mint in a pot on my deck every year so he has fresh mint for his drink. It is light and refreshing, perfect for those hot summer days!!


Ingredients:

5 mint leaves
½ teaspoon white granulated sugar
½ oz freshly squeezed lime juice
¾ oz simple syrup (see recipe below)
1 ½ oz white rum
Club soda
Ice

Simple Syrup:

Combine 1 Cup granulated sugar with one cup water in a small saucepan. Stir mixture and bring to boil, ensuring sugar is completely dissolved. Allow mixture to cool and store in the refrigerator.

Drink Instructions:

Place mint and sugar in a glass,using a muddler (or similar utensil) crush and press the mint trying not to shred it. Add ice, rum,lime juice and simple syrup to mint mixture. Stir to combine. Add club soda and ice. Enjoy!!

Combine sugar and water in a medium saucepan.

Bring mixture to a boil, ensuring sugar is dissolved. Remove from heat and cool completely.
Squeeze limes. this juicer is great, it makes the job so easy!!

Add fresh mint leaves and granulated sugar to a glass.
Muddle, Muddle!

Just crush the mint, do not shred it, or else you will have mint stuck in your teeth all night!

In a new glass add ice. Darcy likes to muddle in one glass and then add to new glass but this is only his preference. 
Add rum.

Add mint and lime juice.
Add simple syrup.
 
Finish with club soda.
