Banana Cream Pie

This recipe is a classic old fashioned banana cream pie. Its well worth the time to make the filling from scratch. If you can use a whisk then you can make this pie and does not really take a lot of time. You do not have to make your own pie crust or pipe the whip cream. You can just use a ready-made one in the freezer section and slather the whipped cream on top. Its really that easy.





Ingredients

9 inch pie crust (recipe below)
3 cups whole milk
3/4 cup sugar
1/3 cup all purpose flour
1/4 teaspoon salt
3 egg yolks, slightly beaten
2 tablespoons butter
1 teaspoon vanilla
3 bananas (ripe)

Instructions

1. Have baked 9-inch pie shell ready (recipe to follow)
2. In a 4 cup Pyrex glass measuring cup, put in three cups of milk, nuke it in microwave until scalded (approx. 3-4 minutes).
3. In another saucepan, combine the sugar, flour and salt; gradually stir in the scalded milk.
4.Over medium heat, stirring constantly, cook until thickened
(5-8 minutes)
5. In a small bowl, have the 3 egg yolks, slightly beaten, ready; stir a small amount of the hot mixture into beaten yolks; when thoroughly combined, stir yolks into hot mixture.
6. Cook for one minute longer, stirring constantly.
7. Remove from heat and blend in the butter and vanilla.
Let sit until lukewarm.
8. When ready, slice bananas and scatter in pie shell; spread warm mixture over bananas.
9. Refrigerate for a few hours until set, and top with as much whipped cream as you like.


Pie Crust Recipe

Ingredients

1/4 cup vegetable shortening
1/4 butter
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup cold water


Directions
Mix shortening, flour, and salt together with a fork or a pastry blender until very crumbly. Add as much water as needed to hold together, and mix lightly with a fork.
Roll gently on a floured surface to about an inch larger than pie plate. Fold carefully in half, lift to pie plate, and unfold. Press into pan. For a single-crust pie, trim with a small knife to about 1/2 inch beyond rim. Fold up, and pinch so edge of pie is raised from rim. With a fork poke the bottom and sides to prevent it from forming bubbles. Bake in a 400 degree oven for 15-20 minutes until edges and bottom are golden brown.

Combine flour, salt shortening and butter

With a pastry blender, blend until course and crumbly, add water until dough is combined

Roll out until larger than the pie plate

Lift and place in pie plate


Pinch and flute the edges and thoroughly prick the bottom and sides with a fork
Bake in a 400 degree oven for 15-20 minutes

Scald milk in microwave

In a sauce pan combine sugar, salt and flour

Gradually add milk and stir until thickened


Add a small amount of the hot mixture into beaten yolks and combine

Stir yolks into the hot mixture until thickened and add butter & vanilla

Slice bananas and scatter in the baked pie crust

Pour mixture over bananas

Refrigerate until set

Combine whipping cream  and icing sugar


Whip the cream until light and fluffy. Add 1 Tbsp of  powdered sugar if you like.


Take pie out of the refrigerator and decorate with the whipping cream
