Ranch Stuffed Potatoes

The secret ingredient in these stuffed baked potatoes is the dry ranch dressing. We make these potatoes quite often for family events. I make them the day before and keep them refrigerated. These potatoes freeze well .


Ingredients:
5 - 6 baked potatoes, cooled
3/4 cup sour cream
1/4 cup butter
2 ½ cups shredded cheese (divided)
1 package dry ranch salad dressing mix
1-2 cloves of garlic, minced
1 cup chopped green onions
Bacon bits

Directions:
Bake potatoes at 400 degrees for 1 hour or until tender. Cut baked potatoes in half and scoop out insides of potatoes leaving a thin shell. Combine potato pulp, butter, 1 ½ cups of cheddar cheese, sour cream, garlic, 3/4 cup of green onions and ranch dressing mix. Fill potatoes with mixture.

Sprinkle with remaining shredded cheddar cheese, green onions and bacon bits and bake 12-15 minutes in a 375 degree oven or until heated through.

Clean and scrub 5 - 6 potatoes and bake in oven

Take out of oven and cut in half 

Scrap out the pulp

Place the potatoes in a bowl

Add a package of ranch powder dip
  
Combine butter, sour cream,and minced garlic

Add grated cheddar cheese & green onions

Mix until creamy
  
Fill each shell with potato mixture 
Sprinkle with green onion and cheese

Sprinkle with bacon bits and bake in oven until golden brown
