Tuna Patties

 

I originally made these tuna patties for tuna burgers many years ago and now we often enjoy them over a bed of greens, tossed with a vinaigrette. Both ways are delicious and economical as well.






Tuna Patties

20 mini patties or 6 regular


INGREDIENTS

  •  3 (170 gram) can tuna, drained

  •  1 large egg

  •  2 Cups Panko

  • ½ Cup green onions, chopped

  • ⅔ Cup mayonnaise

  • Salt and pepper to taste

  • 4 Tablespoons olive oil, for frying

INSTRUCTIONS

  • In a mixing bowl, add the drained tuna and flake with a fork. Mix in the egg, bread crumbs, green onions, and mayonnaise. salt and pepper. Stir until well-combined. Divide mixture into 20 mini patties. 

  • Heat a non-stick skillet over medium high heat. Add a couple tablespoons of olive oil to the pan. Add half of the tuna patties to the hot pan. Cook on each side for approximately 3-5 minutes per side until they are all nicely golden brown. While cooking the second batch keep the first batch warm in the oven. Add more olive oil to the pan and cook the second batch. 

  • Serve the tuna on a bed of mixed greens, tossed with a vinaigrette or you can make tuna sliders. I have also made large patties and made tuna burgers.

  • Combine all the tuna patty ingredients. 

Mix well


Form into 20 patties.

At this point put in fridge to firm up for at least 30 minutes. 

Heat about 2 tablespoons olive oil and fry half the patties over medium high heat. 

When nice and golden flip patties. 


You don't need two bottles. I just wanted to show the dressing I like. 

Toss the greens with salad dressing and top with the tuna patties.
