BBQ Baby Back ribs




This is a simple and tasty BBQ rib recipe. The recipe comes from Ina Garten, called "Foolproof Ribs". The name says it all, just follow the simple steps and you will have tender, lip smackin and finger lickin ribs! The trick to tender ribs is to pre-cook them before you grill them. This recipe has you bake them in the oven first and then finish on the grill. Ribs are great for company as you can bake them ahead of time and then store in the fridge until you are ready to grill.



The BBQ sauce is very tasty and it makes quite a big jar and will keep for up to a month in the fridge.

BBQ Baby Back Ribs


Ingredients

5 pounds Danish baby back ribs (4 racks)

Kosher salt and freshly ground black pepper


Barbecue Sauce


1/2 tablespoon crushed red pepper flakes

1/2 cup vegetable oil

1 1/2 cups chopped yellow onion (1 large onion)

1 tablespoon minced garlic (3 cloves)

½ Cup tomato paste

½ Cup tomato sauce

1 cup cider vinegar

1 cup honey

1/2 cup Worcestershire sauce

1 cup Dijon mustard

1/2 cup soy sauce

1 cup hoisin sauce

2 tablespoons chili powder

1 tablespoon ground cumin




Directions for the BBQ Sauce:

Heat the oil in a large saucepan over low heat, add the onions and cook for 10 to 15 minutes, until the onions are translucent but not browned. Add the garlic and cook for one more minute. Add the tomato paste,tomato sauce, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin and pepper flakes.


Bring to a boil, then lower the heat and simmer uncovered for 30 minutes. Use immediately or pour into a container and refrigerate for several weeks.


Directions for Cooking the Ribs

Preheat the oven to 350 degrees F. Line a sheet pan with aluminum foil.


Place the ribs on the sheet pan meat-side up and sprinkle them with 2 teaspoons salt and 1 teaspoon pepper. Pour some of the barbecue sauce on each rack (both sides) and cover the ribs loosely with aluminum foil. Bake for 1 1/2 hours for baby backs or until the meat is very tender when tested with a fork. Grill right away or refrigerate to grill later.


Heat a charcoal grill with a layer of hot coals or heat a gas grill to medium-high heat. After the charcoal turns gray, brush the cooking grate with oil to keep the ribs from sticking. Place the ribs on the grill ribs-side down, and grill for 3- 5 minutes. Turn the ribs meat-side down, put the lid back on and grill for another 3 to 5 minutes, until nicely browned.Baste both sides generously with the BBQ sauce. Watch very carefully that the ribs do not burn. Stay at the grill. Place on a cutting board and cover tightly with aluminum foil and allow the ribs to rest for 10 minutes. Cut into ribs and serve hot with extra barbecue sauce on the side.

Heat oil in a saucepan over medium heat. Cook onions until they are translucent.

Add garlic. Cook for about 1 minute.

Add the rest of the sauce ingredients.

Bring mixture to a boil and then turn down to a simmer. Simmer for about 30 minutes or until sauce has thickened up.

Makes a big jar of sauce. You will not use it all in this recipe. Store remainder in fridge for several weeks.

On a foil lined baking sheet, slather sauce all over both sides of the ribs. Cover with  aluminum foil and bake in the oven at 350 degrees for about 1 1/2 hours or until ribs are tender but not fall apart tender.
Remove ribs from oven testing to make sure they are nice and tender.

Heat and grease up the grill. BBq for a few minutes on each side.

Slather some more sauce on both sides of the ribs. Make sure they do not burn. Do not leave the grill Babysit those baby backs

Cut into individual servings and dig in!
