Cranberry Oatmeal Cookies


This recipe is the base for a perfect oatmeal cookie that everyone loves. You can use whatever dried fruit you have or instead of walnuts use pecans or almonds, Add white chocolate chips or even orange zest. Enjoy!



Yield : 5 dozen cookies
Ingredients:
1 cup butter
3/4 cup granulated sugar
3/4 cup brown sugar
2 eggs
1 teaspoon pure vanilla extract
1 3/4 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 ½ cups rolled oats
½ walnuts, chopped (or pecans or almonds)
1 cup dried cranberries (or other dried fruit)
Optional ingredients:1/2 cup of white chocolate chips
zest of one orange

Directions:
Preheat oven to 350 degrees.
Cream butter and sugars until fluffy
Add eggs and vanilla.
Combine dry ingredients in a bowl.
Gradually add to butter mixture and stir until well blended.
Add walnuts and dried cranberries.
Drop by teaspoonful or using a mini scoop onto parchment covered baking sheet.
Bake about 10 to 12 minutes, or until lightly golden. Cool.
