Chocolate Zucchini Cake

This is a very moist and tasty chocolate cake, frosted with my favourite chocolate frosting. I grow zucchini just to eat this cake!!



Ingredients



  • 1/2 cup butter, softened
  • 1-3/4 cups sugar
  • 1/2 cup canola oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup  milk
  • 1/2 cup buttermilk
  • 2-1/2 cups all-purpose flour
  • 1/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups shredded zucchini
  • 1/2 cup semisweet chocolate chips
  • ½ Cup chopped nuts

Icing Ingredients:
2 squares (2 ounces) semi-sweet chocolate
2 Tablespoons butter, softened
¼ Cup milk
2 Cups-2 ½ Cups powdered icing sugar

Directions

  1. Preheat oven to 325°. In a large bowl, beat butter, sugar and oil until smooth. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine milk and buttermilk. Combine flour, cocoa, baking soda, baking powder and salt; add to batter alternately with milk mixture, beating well after each addition. Fold in zucchini, nuts and chocolate chips.
  2. Transfer to a greased 13x9-in. baking pan. Bake 45-50 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack.
  3. When cake cooled frost with the icing. Melt chocolate and butter together in the microwave. Careful to not overheat the chocolate. Blend in the milk, add icing sugar slowly until you have reached a nice spreadable frosting.

Beat butter, oil and sugar until smooth.

Add eggs one at a time and beat.

Add the next egg, beat until smooth.

Add vanilla.

In another bowl combine flour, cocoa, baking powder, baking soda and salt.

Add dry ingredients and liquids alternately until well blended.







Fold in grated zucchini, nuts and chocolate chips.


Put cake batter into a greased 9x13 inch baking pan.

Bake in 325 degree oven for 45-50 minutes or until a tooth pick comes out clean when inserted.

Cool on wire rack.

In a microwave safe bowl melt chocolate and butter. Blend until smooth. Do not over heat!!!


Add milk and desired amount of icing sugar.

Nice spreadable chocolate frosting. Yummy!!
