Birthday Party Ice Cream Cake




I am not a big fan of store bought ice cream cakes as they often use low quality ice cream and edible oil products that taste artificial. If I am going to eat a high calorie food I want every morsel to be well  worth it!! We usually make this cake for Birthday parties and young and old all seem to love it. This cake is very easy to make it just requires some freezing time in between layers. Feel free to choose different flavoured ice cream and toppings. I have used mocha ice cream instead of chocolate and topped the cake with "Crispy Crunch" chocolate bars.



Ingredients:

1 ½ boxes (400 grams per box) of Oreo cookie crumbs.

½ Cup butter melted

1 litre chocolate ice cream

1 litre vanilla ice cream

1 bottle chocolate sundae sauce

Mini Oreo cookies/ or Skor bars for decorating

1 can real whipped cream




Line a nine inch springform pan with wax paper.

Mix crumbs with butter.

Press half of crumb mixture into the bottom of the pan.

Press the softened vanilla ice cream over the crumb mixture.

Freeze for one hour or longer.

Reserve ½ Cup of the crumbs for sprinkling over top of the cake.

Sprinkle remaining crumbs over vanilla ice cream.

Squeeze the chocolate sauce over the crumb mixture. The quantity is totally up to you.

Press the softened chocolate ice cream over the chocolate/crumb mixture.

Freeze for one hour or longer.

Decorate with a layer of whipped cream.

Decorate with cookies or crushed chocolate bars

Sprinkle with some of the remaining crumbs.




Combine crumbs and melted butter.

Press into a 9inch springform pan. This is a pan that has a removable side.
Press in softened ice cream. I usually start with vanilla first as I like the way it looks better.

Freeze the ice cream for a hour or longer.

Press the remaining crumbs over the ice cream.

Drizzle chocolate over the crumbs.

Add as much chocolate as you want. No rules!! We like a gooey chocolaty center. 

Now add the next layer of ice cream. Here I added vanilla, but if I was paying attention to what I was doing it would of been chocolate. So vanilla is the bottom layer and chocolate is the top layer, got it!!
Decorate with REAL whipping cream. 

Decorate with cookies or chocolate bars or with whatever your heart desires!! Now freeze the cake for a few hours or overnight!

Remove the side of the pan and slice.
