Broccoli and Chicken Casserole


This is one of our favourite casseroles, simple and tasty. I serve this dish with rice. This recipe came from the "Best of Bridge" recipe book.






3 -4 large boneless skinless chicken breasts, cubed


Salt and pepper


3 tablespoons oil


3-4 cups chopped fresh broccoli


1(10 ounce) cans cream of chicken soup


½ cup mayonnaise


1 teaspoon curry powder


1 teaspoons lemon juice


1 cup grated cheddar cheese


Directions:

Cut chicken into small bite size pieces and sprinkle with salt pepper.
Saute chicken in oil over medium heat until white and opaque. Remove from heat, drain.
Cook broccoli just until tender crisp.
Mix up chicken soup, mayonnaise lemon juice and curry powder until well blended.
Butter a 9 x 13 dish. Layer the broccoli, then chicken in the buttered dish and pour the soup mixture over top. Sprinkle with cheese.
Bake uncovered at 350 degrees for about 30 minutes.


Serves 6
Cook the cubed chicken in vegetable oil. Season with salt and pepper.

Cook until chicken is white or opaque.

Combine soup, mayonnaise, curry powder and lemon juice.

Cook broccoli and sprinkle into a greased 9x13 inch casserole pan.

Top broccoli with chicken.

Spread the sauce over the chicken.

Sprinkle with cheese.

Bake in 350 degree oven for approximately 30 minutes.

Serve over rice.
